In the last few years, Ibiza has established its claim as one of the top destinations for luxury holidays. That means not only stunning yachts and opulent villas, but also some of the greatest places to dine on Earth.

The best Spanish chefs head to Ibiza for the summer, opening pop-up restaurants that serve incredible innovative cuisine and taking advantage of the island's fresh produce. So we have sacrificed ourselves and compiled a list of the best gourmet restaurants on the White Isle.

Once in a lifetime experience - Sublimotion Restaurant

Dubbed "the world's most expensive restaurant", dining at Sublimotion is definitely only for those with deep pockets who can splash almost €2000 per person. An 8-Michelin star team has been gathered at this restaurant, including main chef Paco Roncero, who has two, as well as Dani Garcia, Diego Guerrero, Toño Pérez, David Chang and pastry master Paco Torreblanca. Sublimotion has only one table for 12 diners, surrounded by 360º screens, a state-of-the-art sound system, and technology that controls humidity, temperature and fragrances. Thus, dining turns into a 3-hour dramatised experience in which all senses are stimulated thanks to the participation of a team of 25 professionals, including audiovisual technicians, musicians, artists and illusionists. Last year, they also incorporated virtual reality which, together with augmented reality, will take diners inside a Charles Chaplin movie, a picnic in Central Park, an Asian market, or even under the sea. Celebrities like Cher, Christina Aguilera, Sergio Ramos and Cristiano Ronaldo have already tried it.

Groundbreaking dining - Heart Ibiza Restaurant

Heart Ibiza is also much more than a restaurant. This collaboration between the multi-awarded Adrià brothers (Ferrán Adrià's now closed elBulli restaurant was chosen as the best in the world several times) and the Cirque du Soleil not only offers great cuisine but also original shows and an experimental nightclub. You can spend your whole evening here, starting with a cocktail and a snack on their terrace overlooking Dalt Vila and dotted with creative street food stalls, moving on into the dining room for a tasting menu devised by the Adriàs while you watch Cirque du Soleil artists perform, and then finish at their club listening to some of the best names in electronic music.

Eco-conscious dinner - Can Domingo Restaurant

Located in the beautiful countryside near the town of San JoséCan Domingo Restaurant is the creation of three Italian friends in love with Ibiza. At the tables situated in their tranquil garden, you can taste gourmet Italian cuisine made with organic ingredients and perfectly balanced to minimise salt and fat without sacrificing flavour. Most of the produce they use comes from their own permaculture garden or from local producers, following a zero-kilometre philosophy. Everything is home-made here, and there are lots of gluten-free and vegan options. If you want your evening to be unforgettable, book a table on a Tuesday or Saturday night when a jazz band plays in the garden while dinner is served.

Eating with the stars - Lio Restaurant

Lio Restaurant is undoubtedly Ibiza's favourite celebrity haunt. Hollywood stars, footballers, models and billionaires come here to start their evening off. They serve delicious international cuisine but food is not Lio's main draw. The restaurant is famous for its musical performances and cabaret entertainment, which takes place during dinner. After eating, the party begins with some of the best DJs on the island playing their hits throughout the night. This year, Idris Elba, Kylian Mbappé, Gloria Estefan, Olivia Culpo, Dwayne Wade and Leo Messi have all been spotted here.

Gourmet cuisine on the beach - Amante Restaurant

The restaurant at Amante Beach Club is the true embodiment of Mediterranean luxury: breathtaking sea views, plush day beds on the beach and delicious food and cocktails make this an idyllic place for a romantic dinner. Their menu is comprised of modern Mediterranean food with contemporary Spanish and Italian recipes, as well as fresh fish and meat cooked in a Jasper oven. A hidden gem on the cliffs near Cala Llonga.

Fine dining in Formentera - Can Dani Restaurant

Formentera has been attracting the rich and famous for years now, so it comes as no surprise that this small island boasts some of the best restaurants in the Balearics. Can Dani is a true hidden gem, located on the road that runs to Pilar de la Mola. At this converted rural house, they serve traditional local cuisine prepared with the latest techniques and made with fresh produce. They offer a selection of tasting menus featuring dishes such as 'Farmer egg, Mahón cheese and chicken', 'Black pork and figs' or 'Pumpkin, orange and chocolate'. A feast for the eyes and the taste buds.
