Declared a Protected Cultural Manifestation by the Spanish central government, the 'Caramelles de Nadal' are one of the oldest Christmas traditions in the islands of Ibiza and Formentera.

A group of singers perform songs at 'Misa del Gallo' (midnight mass on Christmas Eve) announcing the arrival of Jesus to the music of traditional 'espasí' (a metal piece in the shape of a sword), 'castanyoles' (castanets), flutes and a drum.

Caramelles have a set structure and last around 20 minutes. They are sung by the 'caramellers', traditionally prominent men from the local community.

On Christmas Eve at Puig de Missa and Sant Francesc (midnight) churches, on Christmas day at Santa Gertrudis church (12:00), and on December 26th at Pilar de la Mola (17:00) church.
